Lavender is widely used in Provincial restaurants and dishes such as lavender sorbet, lavender honey ice cream and crème anglaise. These are becoming popular in our Australian cuisine.
Traditionally the bee keepers of Province move their hives through the lavender fields from Spring to Autumn. The bee harvested nectar of lavender flowers has a clear and subtle flavour. It is now a favorite ingredient in local baking and is used on the Sunshine Coast Queensland in the manufacture of local Chocolate, Gelato and Nougat.
